High in Colombia’s Andean mountains, where mist caresses the treetops and the earth sings with life, lies the birthplace of our coffee. In Gaitania, Tolima, smallholder farmers nurture each tree with care—a dedication embodied by the Black Condor Project. Every bean is handpicked at peak ripeness, then pulped, fermented with mucilage for 24 hours, and sun-dried for 25 days to preserve its unique character. In collaboration with Forest Coffee, this initiative guarantees fair compensation to farmers by offering rates 20% above market value.
At MERGAVI Coffee Roasters Co., we hand-roast each batch to reveal a symphony of almond, caramel, red fruits, and panela. El Aroma del Cafetal is more than coffee—it’s a poetic journey into Colombia’s heart.
